With summer here who wants to be wasting their time in the kitchen? Certainly not me!! This has been my go-to lunch recipe and it seems to be a winner with the husband as well.
P.S it’s even better if you enjoy it with a glass of rosé.
This salad takes about 20 minutes of prep time. Here’s what you’ll need.
- Lettuce; I like using scissors to cut my lettuce, it’s quick and easy! The smaller the piece, the less it feels like I’m chewing on healthy green stuff 😉
- Cucumbers
- Strawberries
- Pinenuts
- Goat cheese (Grill for about 10 minutes)
- Dressing of your choice. I recommend the Raspberries & Balsamic from Stokes or you can even make your own with oil and balsamic vinegar.
